Vin de Pays of the Cévennes
(Pronounced La Rayole)
This cuvée is a blend of Syrah, Grenache, and Merlot
The vinification process for Syrah is conducted through a carbonic maceration as for beaujolais.
For the Merlot and Grenache, a traditional vinification of 20 to 30 days is conducted after destemming.
The blend is made after 6 months aging in vats.
Rich, fruity, and complex wine with soft tanins. The mouth is long and presents a nice freshness.
